Orange Oatmeal Muffins

Oven Temperature: 350 degrees
Time: 15 minutes
Makes 2 dozen muffins

Ingredients:
2 cup oatmeal
2 cup orange juice
3 cup whole wheat flour OR flour
1 cup sugar
2 teaspoons baking powder
2 teaspoons baking soda

Topping:
1 cup oatmeal
4 tablespoons frozen orange juice concentrate, thawed
1/2 cup sugar

To make topping, combine the ingredients until crumbly. Set aside.
Combine orange juice and oatmeal. Set aside for 20 minutes.
Combine dry ingredients and stir well. Add the orange juice/oatmeal mixture to the flour mixture and stir until all the dry ingredients are moistened.
Coat muffin cups with nonstick cooking spray, and fill 2/4 full with batter. Sprinkle topping over the batter.

Chicken Parmigiana

Ingredients:
1/2 cup 2% milk
1 egg
6 ounce chicken breast, no skin, no bone, R-T-C
1/2 cup flour
1 cup seasoned breadcrumbs
2 tablespoons olive oil
2 slices mozzarella cheese
2 slices proscuito

2 tablespoons parmesan
1 tablespoon parsley, chopped
1 cup marinara sauce

Whisk milk and egg together. Dredge chicken in flour, dip into the milk-egg mixture, and then press into breadcrumbs. Place olive oil in a sauce pan over medium heat. Add the chicken and cook 4 minutes on each side. Layer with the procuitto and cheese over the chicken. Place the pan under the broiler and cook until the cheese and proscuitto are golden brown. Remove from the broiler and tip with parmesan cheese and chopped parsley. Drizzle sauce over the top.

Easy Chicken Cordon Bleu

Oven Temperature: 400 degrees
Time: 40 minutes

Ingredients
4 whole chicken breasts in half
8 thin slices cooked ham
4 slices swiss cheese
salt and pepper to taste
thyme or rosemary to taste
1/4 cup melted butter
1/2 cup cornflake crumbs

Sauce:
1 can cream of chicken soup
1/2 cup sour cream
1/3 cup lemon juice

Pound chicken out to 1/2 inch thick. Layer chicken, ham, and cheese, with salt and pepper, thyme and rosemary on top. Roll the chicken. Stick a toothpick in it and roll chicken in melted butter. Cover chicken with cornflakes. Place chicken in 9X13. Bake. Heat sauce in a sauce pan on the stove and serve over chicken.
